Almond Coconut Bars
Who says you have to give up chocolatey goodness to eat healthy? These Almond Coconut Bars are here to prove you can have the best of both worlds! Packed with healthy fats from almonds and coconut oil, these bars are the perfect guilt-free treat for snack time or fika. 🍫🌴
Ingredients:
- 5 dl (200g) almond flour
- 2.5 dl (75g) shredded coconut
- 1 dl (100g) almond butter
- 1.5 dl (140g) coconut oil
- 1 tbsp (8g) coconut flour
- 0.5 tsp salt
- 1 tbsp (15ml) agave syrup
- 100g dark chocolate
- 2 tbsp Coconut Spice Blend
Instructions:
- Prepare the Mixture:
Start by melting the coconut oil in a water bath until it’s completely liquid. In a large bowl, combine the almond flour, shredded coconut, almond butter, coconut flour, salt, agave syrup, and Coconut Spice Blend. Once mixed, stir in the melted coconut oil and blend thoroughly until the mixture is uniform. - Shape the Bars:
Line a 15×20 cm sheet pan with baking paper. Pour the mixture into the pan and use a spatula to press it down firmly into an even layer. Place the pan in the freezer for about 2 hours to set. - Add the Chocolate Layer:
Melt the dark chocolate using a water bath. Once melted, spread it evenly over the top of the frozen bar mixture. Refrigerate for another 10 minutes to allow the chocolate to harden. - Slice and Enjoy:
Remove the set bars from the pan and cut them into your preferred sizes. Serve and savor!
